Here we've added wild yam and a little egg white to buckwheat flour in our pursuit of a great taste and a nice chewy crunch. Another good point is the inclusion of condiments with our menu, and you can savor the characteristic tastes of the region and eat edible wild vegetables in season.
In spring we make tempura with edible wild plants like "Fukinoto (butterbur sprouts)" "Taranome ( devils・Walking Stick, Japanese Angelica shoots)" "Udo (Japanese spikenard)" and rare "Koshi-abura"
