In this "noodle shop" the daughter-in-law has learned the tricks of the trade from her mother-in-law. This technique involves kneading the soba dough, then hitting the dough to stretch it. Because of this, the soba has a delicious elasticity.
There are two types of soba on the menu: "Morisoba" and "Tororo" (yam) soba. The elastic quality makes it feel great sliding down the gullet. It comes in a set with vegetables from our own garden and wild vegetables.
