We ferment and age wine in 23-liter glass carboys (capacity to fill about 30 bottles).
Although these glass vessels are not uncommon in America, there are few in Japan, but we have them. When we received training in Vancouver, there was a winery in the downtown area, in which customers could fill their own bottles to take home.
In Japan you can see wineries of this type in only a few places, like Furano, Hokkaido, ours here in Inawashiro, and only a few others.
In order to ferment in a 23-liter capacity glass barrel, there is a stopper with water trapped in it to let the fermentation gas escape but which, on the other hand, prevents air and bacteria from coming in; as a result it is completely clean. If you can't quite picture this because it is a little difficult to explain, come here and see for yourself when you have a chance,
